Besides using an electronic steamer, you can also steam tofu in a pan, pot or wok as long as the plate fits into it. All you need to do is to boil water in the pan and when it begins boiling, place room temperature plate (with tofu) into the pan with the lid on. Reduce heat to the minimum and let steam from simmering water cook tofu. It takes no longer than 10 minutes to steam tofu.
Silken tofu is best used in this recipe. Otherwise, medium or hard tofu can also be used. Do remove the excess water from tofu before steaming by placing weight on a piece of kitchen paper on the tofu for at least 5 minutes.
If you are a vegetarian, skip the meat and double the amount of shiitaki mushroom. Also, use mushroom sauce instead of oyster sauce.
Place tofu on the plate and add weight on tofu to extract excess water.
Mix oyster sauce, sweet soy sauce and soy sauce evenly. Then, add meat to marinate for 5 minutes. Heat up oil in pan over medium heat. Then, fry minced garlic and minced onions until fragrant. Stir fry minced meat and mushrooms. Then, add water. Mix cornstarch with a bit of water to add to gravy and thicken it.
Steam tofu for 10 minutes. Remove tofu from steamer and drain excess water.
Pour gravy on top of steamed tofu. Garnish with ingredients sliced scallions and chillies.
