Achu murukku Rose Cookies with Eggs is a sweet version of murukku varieties made with a mold. It is very popular in South India and Sri Lanka. A crispy, popular and delicious flower-shaped murukku. It’s very easy recipe and aa must for Deepavali in all homes.

In Tamil language, Murukku means twisted because of its shape and Achu means Mold:  Flower shaped mold is used to make Achu Murukku.

The mold used to make Achu Murukku (Rose Cookies) is made of thin metal sheet shaped like a flower. A handle, about 12 inches long, is attached to the side of the mold and its flower shape.

Rose Cookies or Achu Murukku is a famous sweet snack made during Deepavali and other occasions. A tasty and crunchy sweet made with the batter of rice flour,egg, sugar and using a cookie mold to coat and deep fry it in hot oil. In my childhood, during Deepavali, I look forward to welcoming my friends to my house for Deepavali and also for tasting this yummy and crunchy Rose cookies (Achu Murukku).

The secret to get nice shaped cookies lies in the hotness of the mold. If the mold is hot and then coated with batter, then it will automatically come out when we dip the mold in hot oil. Once the coated batter comes out clean, then its few seconds for frying them till golden brown. Try this scrumptious Rose Cookies (Achu Murukku) and share your experience!


Ingredients

Servings:  
1 cup
rice flour
1⁄4 cup
all-purpose flour
1⁄2 cup
sugar
1⁄2 cup
coconut milk
1
egg(s)
1⁄5 tsp
salt
oil

Steps to Prepare

Step 1 of 6

Preparation: Apply oil on the achu murukku mould and let it rest for one or two days. This will help in making the murukkus easily.

Step 2 of 6

    • 1 cup rice flour
    • 1⁄4 cup all-purpose flour
    • 1⁄2 cup sugar
    • 1⁄2 cup coconut milk
    • 1 egg(s)
    • 1⁄5 tsp salt

Mix the above ingredients in the biggest jar to get a smooth thick batter. Add 1 or 2 tbsp of coconut milk if needed. You can also mix with just a ladle or hand mixer.Remove it into a bowl. Mix in 1 tsp of sesame seeds - black or white, with the batter.(The batter should have the consistency.)

For deep frying, heat oil in a wide kadai. Leave the murukku mould inside the oil. Only if it hot enough, the batter will stick to it.

When the mould has become hot, dip it carefully inside the batter such that only 80% of the mould is covered with batter. This is important so that the murukku easily comes off the mould.

Step 5 of 6

Gently hold the mould inside the hot oil. You will see the oil bubbling. After few seconds, shake the mould handle gently to release the achu murukku into the oil. You can also use a fork to help release the murukku.

Step 6 of 6

Let it fry in medium heat till the bubbling of the oil subsides.Turn the murukkus half way so that both sides have an even golden brown color. In the meantime, leave the mould in the hot oil so that it is ready for the next murukku.

Can add in corn flour. the mould will not catch much batter, so it is thinner and with corn flour it is crunchier.
