I absolutely enjoy this recipe as it is just so simple and fast to prepare. Pak Choi is one of my favourite leafy vegetables. After a long day at work, this is the to-go vegetable dish that can be whipped up without fuss. Vegetables like lettuce can also be used as a substitute to Pak Choi.
Shallots can be substituted with crispy fried minced garlic according to preference. For an extra whiff of aroma, drizzle a bit of sesame oil after pouring the oyster sauce. For those who are vegetarians, use mushroom sauce to replace oyster sauce.

Fry sliced shallots until crispy. Set aside.
Using the same pan, boil some water and blanch 'bok choi' for about a minute. Place 'bok choi' on a plate and pour some oyster sauce on them.
