This is my favourite childhood dish. Dad ate it since young. Always says, never get bored of eating it. I didn’t manage to get chicken. So, in this recipe, i recreated and cooked it using lion mane mushrooms with enoki as vegetarian version. It is as tasty as the meat version.

The important ingredients for this dish are ginger and sesame oil. I saw my sister julienne a big bowl of gingers. For me, I cut down the ginger, so my small boy can eat with us. 

For chicken, I normally use drumstick and tight area as it is soft and juicy. You can opt for part you fancy. Enoki mushrooms is not necessary if you are using chicken. Lion mane mushrooms are easily get from vegetarian shop at the frozen section.

My children loves potatoes. I used 5 medium potatoes. May slice, wedge or dice the potatoes as your wish but not in a big chunk. It may takes longer to cook. 

Lets me share you feedback from my daughter after she tried it. 

Me : “Which is nicer? Chicken or mushroom?”
Gal : “Both chicken and mushroom are delicious. This version with  cucumber, it is crunchy and every munch is even tastier.”

Ingredients

ginger
450 g
lion mane

enoki mushroom
2 tbsp
sesame oil
1 tbsp
oil
4 tbsp
soy sauce
2 tbsp
dark soy sauce
pepper
450 ml
water

cucumber
1 tbsp
mushroom sauce
rice (cooked)

Steps to Prepare

    • 5 potatoes
    • 5 cm ginger
    • 450 g lion mane
    • 1 enoki mushroom

Prepared the cutting ingredients. Dice the potatoes, julienne ginger, cut lion mane mushrooms and 1 pack of enoki mushrooms into smaller size.

    • 2 tbsp sesame oil
    • 1 tbsp oil

Heat up sesame oil and cooking oil. Fried gingers until fragrant.

Add potatoes. Give it a few stir and add in lion mane mushrooms.

    • 4 tbsp soy sauce
    • 2 tbsp dark soy sauce
    • pepper

Add all the seasoning with a dash(es) of pepper.

    • 450 ml water

After stirred for 1 minute. Add water. May opt for more gravy but need to adjust the seasoning.

    • 2 cucumber

Put in enoki mushrooms. Mixed well and increased to high flame. Once water boiling, use low heat to braise for 10-15 minutes or until the potatoes soften. While waiting, julienne cucumber.

    • 1 tbsp mushroom sauce

At this point, after braising for 15 minutes. It already tasted marvellous. So, it is an option to add mushroom sauce. If you want a thicker sauce, may add diluted cornstarch solution.

    • rice (cooked)

Lastly, taste and served with rice.
