I’ve slightly overcooked the anchovies under medium-low heat. Removed from heat. Cooked the onions then put in the fried anchovies and chilies. The anchovies weren’t crispy after that. Any idea, Grace? Thank you.

Oh. Use low heat to fry the anchovies. And make sure the water is dried up when you fried the onion . Off the heat only put in the anchovies.

When the anchovies is completely dried during the frying it will become crispy.

Low heat and don’t over crowded the pan. If a lot of anchovies. Fry them in batches.

I didn't taste the anchovies after frying under low heat and no overcrowding. I fried the anchovies a little overcooked. Therefore, I assumed they should be crispy.
