This is one of my brother favourite dish


Ingredients

Servings:  
Frying oil for frying the fish
670 g
Fish – I use Tilapia
20 g
Garlic – chopped into small pieces
65 g
Shallots – chopped into small pieces
1 tbsp
cooking oil
110 g
Large Chilies – chopped into small pieces
1⁄2 cup
sugar
1⁄4 cup
vinegar
2 tbsp
fish sauce
Coriander for garnish

Steps to Prepare

Step 1 of 4

    • Frying oil for frying the fish
    • 670 g Fish – I use Tilapia

Basically you clean and dry the fish well, rub with some salt. Put oil in a pan and wait until it's really hot before ad in the fish. Then turn down the heat to medium. You can see the method on the video posted above.

    • 20 g Garlic – chopped into small pieces
    • 65 g Shallots – chopped into small pieces
    • 1 tbsp cooking oil
    • 110 g Large Chilies – chopped into small pieces

To make the sauce, add 1 Tbsp of oil in a pan, over medium heat. Add garlic and shallots and chilies and stir-fry until fragrance.

    • 1⁄2 cup sugar
    • 1⁄4 cup vinegar
    • 2 tbsp fish sauce

Add sugar, fish sauce, water and vinegar. Let the sauce simmer until the liquid reduce to half of the amount.

    • Coriander for garnish

Spread the sauce over crispy fried fish and garnish with coriander. Served as a sharing dish with steamed rice in Thai style.
