The most labourious step and the secret to a good pho is to create enough depth in the broth using beef bones and aromatics spices.


Ingredients

Beef bones
300 g
medallion steak
2 cm
Large piece of ginger

Steps to Prepare

    • 1 kg Beef bones
    • 300 g medallion steak
    • 2 cm Large piece of ginger
    • 1 Onion, peeled
    • 6 Star anise
    • 2 tbsp coriander seeds
    • 3 black cardamoms
    • 1⁄2 tsp Cloves
    • 2 Cinnamon bark
    • 3 tbsp Fish sauce
    • Handful of bean sprouts
    • Chopped spring onions
    • Chopped cilantro, mint or parsley as herbs
    • Hoi Sin or Sriracha (optional) to serve
    • Sliced red chillies (optional)

To prepare the aromatics for the broth, pan-fried them lightly in a frying pan till fragrant. the aromatics are then placed inside either a tied cheese cloth or a spice basket (like a tea strainer basket but bigger).

Then, chargrilled an onion till it is weeping. This step is also repeated with a 2 inches ginger (with skin on) till it is slightly burnt.

Add the bones, aromatics, onion and ginger to a large pot of boiling water (8 cups). Boil for 10 minutes, then skim off the meat scum. Some recipes remove the bones and wash under the tap before returning to the stock but I find that it is easier and the bones had more flavour if not done so. Then, add fish sauce and gently simmer with lid close for about 1 hour 20 minutes

Before serving, cook the rice noodles as instructions on the packet, blanch the beansprouts with hot water for 10 seconds, slice the steak thinly and season the broth accordingly with salt and pepper.

Serve the noodles in a bowl, garnished with 3-4 slivers of thinly cut beef, some beansprouts and herbs on top before the hot broth is ladled onto the bowl to cook the beef.
