33rd Main: Pad Thai (Remake 1) [Score: 8.3]

Dish Type: Main

This Pad Thai dish is a remake of the dish I made on the 27 Oct 2019 (Tue). Even though:
1.	I have reduced the soaking time (in boiling water) by 2 minutes, the rice noodles were still soft.
2.	I have also increased the Pad Thai sauce twice the amount I previously used.
3.	In addition, I’ve also seasoned the prawns, added more beansprout and chives into the dish, and added chilli flakes into the garnish.

The score merely increased from 7.8 to 8.3. I’m suspecting two reasons:
1.	Valcom Authentic Thai Pad Thai Paste is not the right Pad Thai paste for the liking, or
2.	I didn’t stir-fry the rice noodles under high heat long enough.

Any comments?

I usually never boil rice noodles. Instead, they are soaked in warm water for about 10 minutes or so. As for paste, I can't say much since I don't know it.
