Cooke this dish today. Omitted the 2nd lot of wine and the cinnamon stick in step 9 of the recipe methodology. I felt it tasted a bit too. Salty and with a slight bitter after taste. Could it be that I added too much red tofu brine and maybe fried the pork at a high fire. Maybe it could be that a cook often has no much appetite after all that cooking. Perhaps it might taste better tomorrow.
