Oxtail Rendang Curry Laksa. Ohhh How Yummy it was!!! The Art of Nyonja Cooking - Invention, Fusion and Experimentation !... Brown the oxtails then set aside. Fry chopped onions then add Rendang Paste and fry till fragrance begins to tickle and tease the nasal senses. Add the oxtails, fry a bit then add water to cover well then cook on rolling boil for couple of hours till meat tender. Add more water if running dry. ( quicker way is to pressure cook at this stage, but since I got induction cooker my pressure cookers don't work and I am too miserly to buy a new one !). Then add goodies such as aubergines, okra, green beans, fried tau foo, etc ( whatever you have at hand ) and some santan (creamed coconut or coconut milk). To serve up I used glass noodles, then pour soup with goodies over. Garnished with 1/4 boiled egg, some iceberg lettuce, ( cooked beansprouts if you have ), fried shallots/ onions and some fresh mint.. Voila !!
