Salad with beetroot, egg, tomato and crushed peanuts and a side of rice cooked with sultanas.
My first attempt at Beef Rendang served with yoghurt and mint, and crushed peanuts. Hint - remove the seeds from the fresh chilli. I added peas, tumeric and raisins to the rice.
I used the Pineapple Fried Rice recipe as inspiration to use left over rice and some vegetables. I included mushrooms, celery, capsicum and some frozen peas. Follow the Nyonya Cooking recipe but use whatever ingredients you have.
