Japanese Cotton Sponge Cake by Apron.  This recipe works - cake is moist and best of all, it did not collapse on me, YaY!
This is perfect for cooking Hokkien mee.
Love this recipe because I had so much fun making them. They tastes great and you can make a big batch to freeze.
Tq Grace for the recipe. The secret ingredient really does made a huge difference.  My family loves it.  I made the noodles from scratch so next time with a bit more dark sauce, the dish should be the perrrfect black Hokkien mee :-)
