It was only tonight (after so many months it seems) that I have the opportunity to make this crumbly and melt-in-your-mouth pineapple tarts that are well-loved in Singapore, Malaysia and Indonesia. The enclosed buttery goodness is made to surround the tangy pineapple jam, creating a match made in heaven when eaten together.
