Pengat pisang is a traditional Malay dessert. For the peranakans in Malacca and Singapore, pengat is almost always cooked with gula melaka (palm sugar) while in some communities in northern Malaysia, white gula pasir (granulated white sugar) is mostly favoured. For example in Kedah, pengat pisang is cooked with white sugar, and bijik sagu (sago) is often added for textural contrast. In this recipe, I prepare pengat pisang with sago in coconut milk and palm sugar.
