Used the carcass of chinese roast duck to make a delicious soup base with half an onion. Then stripped off all the meat. Cooked  a few potatoes, green beans, choi sum, aubergine and chinese mushrooms to add to the Laksa. Mixed in Laksa paste to the soup and some creamed coconut, boiled for 10/15 mins. Then added the precooked veg. Served with noodles, garnished with fried shallots, 1/4 egg and finely chopped green of spring onion ( did not have any corriander ) and a basil leaf ( would have used mint if at hand ). And voila !!!!.. simply delicious way of using left over duck and satisfying that laksa  addiction!. I think my Njonya grandmother would have reluctantly approved..lol!
