Compressed rice aka "nasi impit" is one of the accompaniments of the world-renowned 'satay' or grilled skewered meat. It tastes best when dipped with peanut sauce. The texture of the compressed rice is firm but not hard. Normally, compressed rice is kept in the refrigerator for a few hours as it is best served chilled and a definite delight when eaten together with warm peanut sauce. Another fantastic combination of hot and cold flavours.

Besides that, compressed rice can also be served in a bowl of broth in a dish called 'soto ayam'. However, if you are a lover of spicy food, have compressed rice with rendang or chicken curry instead. You can't go wrong!

  • 1 cups rice
  • 1 pandan leaves
  • salt
  • 2 cups water

Steps to Prepare



Wash rice thoroughly. Cook rice with water along with a knotted pandan leaf at highest heat. Bring to boil and then reduce heat to the lowest to let the rice cook for 5 minutes.



Using a fork or a potato masher, mash the rice until grains of rice is no longer obvious.



Fluff rice and allow rice to cook for another 10 minutes. If rice is still uncooked, add some water and mix well. Allow it to cook for another 5 to 10 minutes. Once rice is cooked, cover the pot and remove from stove.



Shape rice into a rectangle using cling wrap in a square or rectangular pan. Serve cold (keep in refrigerator) or at room temperature.
