Sweet corn jelly is a fun dessert to prepare especially if stored in eggshells. Also called sweet corn agar-agar, this is a simple and fast recipe you can prepare with kids. Make this for Easter or simply enjoy it anytime you desire.

This easy to prepare and fun dessert is a great favourite among children and adults alike. During my childhood, my mom often made them for my sister and I. We always look forward to having these corn jellies in eggshells for their deliciousness and cuteness.

Type of sweet corn to use

Sweet corn are sold in cans. For this recipe, I used canned cream corn. It contains corn kernels and sweet cream which goes very well with the jelly. You may also use corn kernels from the cob, if you prefer. If you do, blend some of them and mix it with the rest of the whole corn kernels. This gives a better flavour to the jelly.

Use soy milk for white jelly

For a more realistic visual, use soy bean milk instead of water to create the jelly which represents the egg white. Reduce the amount of sugar as soy bean milk is already sweetened.

Designing egg shells

To create the designs, either dye the egg shells or paint them with food colouring. I created these Easter egg decorations using sharpie or marker pens. I am totally in love with the combination of the white and black theme. Sharpies are safe to be used. Moreover, the ink did not seep through the egg shells. To get clean and clear designs, just ensure to remove them from the refrigerator after chilling and leave them aside for about 10 minutes. After that, start working on the dry surface. Of course, drawing on the empty egg shells beforehand is also an option. Have fun creating amazing designs!

Steps to Prepare

    • 10 egg shells

Prepare eggshells by creating a small hole at the top using a knife or chopstick. Wash and dry thoroughly.

Put water, agar-agar powder, sugar and pandan leaves into a pot. Boil over medium heat for at least 5 minutes.

    • 10 tsp creamed corn

Fill each eggshell with some cream corn. Then, pour in agar-agar mixture.

Let the jellies cool. Then, put them into the refrigerator. Optionally, decorate eggshells. Serve chilled.
