Snow fungus soup is one of the popular Chinese desserts. There are many variations to it and one of the more well known combination uses apples. Apple snow fungus dessert is easy to prepare and very nutritious. Within the Chinese community, it is also known as “tong shui”, literally translated to sugar water. These soup desserts are not only sweet as the name suggests but also healthy and nourishing.

Benefits of snow fungus

Due to the properties in snow fungus which are able to reduce collagen losses in the skin, it is a popular food for those who are looking for natural anti-aging food. Chinese ladies take this as a cheaper option to expensive herbs for beautiful skin. According to traditional Chinese medicine beliefs, snow fungus is said to also aids in curing dry coughs and clearing the heat in the lungs.

Snow fungus can be bought at the Asian grocers.

Substitute for snow fungus

Unfortunately, there is no substitute for snow fungus.

North and south apricot seeds

Apricot seeds used are of the 南杏 (South) and 北杏 (North) types. These apricot seeds can be found at Asian grocers. They look similar but are actually different. South and North apricot seeds contain lots of vitamins.

You may omit North and South apricot seeds from the recipe if you are unable to find them. Substitute with some gingko seeds which will work perfectly with this dessert too.

Double boiling or using pressure cooker

You may double boil the soup for ca. 4-6 hours. However, it will take about 1 hour using a pressure cooker. If you don't have a double boiler, you may place the soup in a ceramic or porcelain bowl and covering it with a plate. Then, double boil it in a cast iron pot. This works just as well as a double boiler. I have been using this method for years now and had never encountered any problems. Served cold or warm?

This dessert may be served either cold or warm, depending on your preference. Great for winter and even the very warm weather to cool the body heat.

How often can snow fungus dessert be taken?

Although this dessert has lots of vitamins, you should not simply over indulge. As it has ‘cooling' properties, take this dessert moderately depending on your health condition.

Steps to Prepare

    • 1 snow fungus

Hydrate snow fungus by soaking them in water overnight or for at least 4 hours. Once snow fungus softens, remove areas which are hard.

    • 1 l water
    • 1 apple(s)
    • 4 red dates
    • 1⁄2 tbsp apricot seeds (north)
    • 1⁄2 tbsp apricot seeds (south)
    • 70 g rock sugar

Remove the skin and core of the apple. Cut apple into equal chunks. In a pot, add water and cook over high heat. Once water boils, add apple, red dates, apricot seeds and snow fungus. When water begins boiling again, reduce the heat to the lowest and simmer for about 30 minutes or until apple softens. Sweeten with rock sugar. Enjoy it chilled or warm.

Is adding rock sugar a must or we could replace it with dry longan ?

Yes, you can replace it with dry longan. Rock sugar adds sweetness. It is also said to have good benefits for the lungs and throat.
