Fried shallots are not only used to add flavour but also as garnishing. I used to think that it is quite a hassle to fry shallots because a lot of times, they do not turn out crispy and does not have a long shelf life. Before frying the shallots, there are a few things to note in ensuring the crispiest and most delicious fried shallots. Shallots must be cut into thin slices but not too thin or the shallot slices would burn very quickly and would not be flavourful. If you want to be very precised, the shallots should be cut into slices of about 0.2 cm thick. The thickness of the shallot slices should also be uniformed. Otherwise, some of the shallots slices may cook faster than the rest resulting in a batch of unevenly fried shallots. Sliced shallots must be soaked in salt water to reduce the amount of moisture in the shallots. By doing so, the fried shallots would be even crispier. Ingredients

  • 10 shallots
  • 200 milliliters oil
  • water
  • 1/4 teaspoons salt
  • 2 teaspoons corn starch

Steps to Prepare

  1. Soak sliced shallots in salt water for 10 minutes.
  2. Lightly pat dry the shallots using a kitchen towel.
  3. Sprinkle some corn flour on sliced shallots and mix well.
  4. Fry sliced shallots in heated oil at medium heat.
  5. Add a pinch of salt.
  6. Remove fried shallots once they are golden brown.
  7. Strain excess fried shallots from oil to obtain shallot oil.
