A simple after work vegetables dish which only involves blanching and minimal ingredients.
I absolutely enjoy this recipe as it is just so simple and fast to prepare. 'Bok Choy' is one of my favourite leafy vegetables. And after a long day at work, this is the to-go vegetables dish that can be whipped up without fuss. Other vegetables like lettuce can also be used instead. Fried shallots is used to add a nice smoky flavour and crunch to the vegetables. It can be substituted with crispy fried minced garlic, according to preference. For an extra whiff of the aroma, drizzle a bit of sesame oil after pouring the oyster sauce. For those who are vegetarians, use mushroom sauce to replace oyster sauce.

Steps to Prepare
- Fry sliced shallots until crispy. Set aside.
- Using the same pan, boil some water and blanch 'bok choi' for about a minute.
- Place 'bok choi' on a plate and pour some oyster sauce on them.
- Sprinkle fried shallots on 'bok choi'.
